Raspberry Sour Cream Muffins

Raspberry Sour Cream Muffins
3 cups All Purpose Flour
3 cups Whole Wheat Flour
3 Tbsp Baking Powder
1 tsp Salt
6 Large Eggs
2 Tbsp of Vanilla
2 cups Sugar
3/4 cup Melted Margarine or Butter
3 3/4 cups Sour Cream
4 cups Fresh or Frozen Raspberries


Preheat oven to 375'F.  Grease 3 dozen muffin tins or place paper liners in them.

In a large bowl mix the two different flours, baking powder, and salt.

 Place all 6 eggs in the KitchenAide mixmaster and beat them until light and fluffy.

Add sugar to the eggs and Vanilla and beat them together.

Add melted margarine to egg mixture and beat.

Add sour cream and and just mix just until blended.

Add raspberries to the flour mixture and toss to coat them.

Add egg mixture to flour mixture and stir until blended.

Fill muffin tins 3/4 full and bake for 18-22 minutes.

These muffins where amazing.  
You can substitute the raspberries for blueberries, strawberries, or saskatoon berries.

 Hope you all enjoy these muffins as much as my teenagers did.  
They ate all three dozen in three days!

Roses from Safeway

I was able to visit a very special lady in my life and bless her with some roses. When you share your roses with others, you can mix a few colors and they turn out beautiful. I hope you have a chance to go get some roses for yourself or someone special before Sunday!

Safeway Deals this weekend only...

This is a 3 day sale at the Safeway in Kelowna.  It starts Friday and runs until closing on Sunday!


If they are out of the Popsicles or any other kind you want, you can ask for a raincheck and they will give you one.  One Safeway in Kelowna gave me one for 10 boxes and the other one would only give me a raincheck for a limit of 6.  I did get a couple of boxes, but with teenagers, they won't last...  Happy Shopping!

Spaghetti Sauce

Spaghetti Sauce-Lynn's Recipe

1 to 1 1/2 pounds Ground Beef
1-8oz package Sliced Fresh Mushrooms
4-6 Sticks of Celery
1 large Onion
4-6 Cloves of Garlic
2-8oz cans Tomato Sauce
1-28oz can Diced Tomatoes
1 -6oz can Tomato Paste
1 Tbsp Sugar
1 Tbsp Dried Oregano
1/2 Tbsp Dried Basil
1/2 Tbsp Dried Parley
1/2 Tbsp Black Pepper
1/2 Tbsp Salt
1 tsp Dried Hot Chili Peppers
4 Bay Leaves


I accidently forgot to put the tomato paste in the picture and put another can of diced tomatoes instead.
Sorry about that, I didn't notice until I was posting this picture to the blog.

Start by frying the ground beef until cooked throughout.
 

Sprinkle a little salt and pepper to the meat while it is cooking.

While beef is cooking chop the celery and large onion.

Add chopped vegetables to the crockpot.

Mince garlic and add it to the crockpot.  I love my garlic press.
Now with garlic, we like lots, so I put in 6 cloves.  
It's up to you and your family as to how much garlic you like in your sauce. 

Add the can of crushed tomatoes, tomato paste, and two cans of tomato sauce. 
Give it a nice stir to mix it up well.

Add all the parsley, salt, pepper, basil, hot chili peppers, oregano, and sugar to the sauce mixture.  

Once the ground beef is fully cooked, drain the fat and add it to the sauce. 
Add the chopped mushrooms too. 

Add the bay leaves and give it a good stir.   

Place the lid and let it cook on High for 6-7 hours. 

This is a great way to serve a lot of people at once.  
Cook up some garlic bread and past to complete your meal.
This makes a lot of sauce.  You can also add green peppers or more hot chili peppers if you like.
You can keep the sauce in the fridge for up to 4 days or use the leftovers for lasagna.


Pumpkin Spice Scones

Pumpkin Spice Scones-Like Starbucks

Scones:
2 cups All-Purpose Flour
3/4 cup White Sugar
1 Tbsp Baking Powder
1/2 tsp Salt
1/2 tsp Ground Cinnamon
1/2 tsp Ground Nutmeg
1/4 tsp Ground Cloves
1/4 tsp Ground Ginger
6 Tbsp Cold Butter (must be kept cold in fridge)
1/2 cup Pure Pumpkin (can use canned)
3 Tbsp Cream
1 Large Egg

Glaze:
3/4 cup Icing Sugar
1-2 Tbsp Milk
1/4 tsp Cinnamon
1/8 teaspoon Nutmeg
Pinch of Ground Ginger
Pinch of Ground Cloves

Well, I have to confess that I don't really like pumpkin pie or anything with pumpkins in it, 
but this is one of my favorite breakfast treats.
Preheat oven to 425'F.


I forgot to put my can of pumpkin in my ingredients picture, sorry about that.

Measure and add flour, sugar, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a food processor with the chopping blade in it. 

Place the lid and give it a quick mix to blend it all.  
This is an old food processor from my sister-in-laws old neighbor.  
I received it for free and have had it for 10 years and it still works awesome!

Cut the cold butter into nice small square pieces and add it to the food processor.  
I keep my butter in the fridge right up to this part to keep it cold.

Pulse blend the butter and flour mixture until it is well blended and almost pea size pieces.

Quickly add the pumpkin, egg, and cream to the butter mixture.

Blend the wet and dry mixture until it is all mixed well.  
See picture below for the look of it when well blended.

Sprinkle flour on a cookie sheet and pumpkin dough on it.

Spread the dough with your hands to form a flat rectangle.  Use lots of flour on your hands and sprinkle some on top to help form the rectangle.  You can use parchment paper to help shape it as well.

Using a sharp knife with some flour on it, cut the dough into 8 equal parts.
Spread them evenly apart like below.  Place in preheated oven for 14-18 minutes.
The edges will be turning a nice golden brown.
Place them on a cooling rack to cool a bit before adding the glaze.

While they are baking, you can put the glaze together.  Here is what you will need for the glaze.

Place everything in a small bowl and mix until well blended.

Doesn't this look so yummy???

Once the scones have cooled off cover them with glaze and enjoy them with a lovely cup of coffee.


I hope your family enjoys them as much as ours does.  I took a double batch to the hockey arena one morning and everyone raved about them.  Many said they are better than the Starbucks ones.
My entire family eats them, especially fresh out of the oven!
